Chocolate Chip Banana Muffins
Ingredients
- 1/2 cup Butter
- 1 cup Sugar
- 2 Eggs
- 4 Lg. Bananas, very ripe
- 1 – 3/4 cups Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 cup Chocolate Chips, optional
Directions
- Bread – 1 hour to 1 hour and 15 minutes.
- Regular Muffins – 15 to 20 minutes.
- Mini Muffins – 8 to 12 minutes.
Note: This recipe makes 1 loaf, or 24 regular muffins, or 5 to 6 dozen mini muffins.

When mixing together I don’t use beaters or a kitchen mixer. I just use my King Arthur Dough Whisk, but most people don’t have a hand dough whisk so a regular whisk would work great too. Note: Don’t over mix or you will have very tough muffins! Just mix until the flour in combined.
- Bread – 1 hour to 1 hour and 15 minutes.
- Regular Muffins – 15 to 20 minutes.
- Mini Muffins – 8 to 12 minutes.
You will notice that your mini muffin tin is all crusted and stuck on after several dozen. Check out my post on Cleaning Muffin Tins for a quick easy way to clean up.
Made these this morning in my baked donut pans (they take about the same amount of batter as a normal size muffin). They worked beautifully and I got more of the delicious crust because of the hole through the middle.
That sounds fancy! I love that delicious crust.
