Kevin, my husband, served an LDS mission in France and Switzerland for 2 years. While there he developed a deep love for all cheeses, well almost all. In the last couple of years, I have been slowly trying to learn to like different soft cheeses. Thanks to my sister-in-law, Stacey, I have developed a love for feta. The creamy texture and the mild flavor is something I now crave.
Stacey makes a wonderful greek salad and brings it to most family gatherings. Over the years and after many samplings, I have developed a love for this salad. Last month while visiting her I asked her to teach me what she puts into her salad. Like most wonderful chef’s, she doesn’t have a recipe she just eyeballs what it should look like. I observed what she did and have come up with a recipe.
Greek Salad
Ingredients
- 25 Grape Tomatoes, halved
- 1/2 English Cucumber, sliced
- 1/4 Red Onion, diced
- 1/3 cup Feta Cheese, crumbled
- 1 T. Red Wine Vinegar
- 1 T. Olive Oil
- Salt & Pepper to taste
Directions
Cut tomatoes in half. Peel cucumber, cut in half and then into slices. Dice red onion.
Place tomatoes, cucumbers and onion into bowl.
Add olive oil and vinegar. Stir until everything is well coated.
Add feta, salt and pepper. Gently stir.
Makes about 4 cups.

Cut tomatoes in half. (I have used the yellow sunburst tomatoes before and they are also delicious!) Peel cucumber, cut in half and then into slices. Dice red onion. Place tomatoes, cucumbers and onion into bowl.Add olive oil and vinegar to vegetable mixture. Stir until everything is well coated.Add feta, salt and pepper. Gently stir. Note: Don’t add feta until after you have mixed in the olive oil and vinegar. Mixing it to much will break it down into a paste, which you don’t want to have happen.Now dish it up and serve with any entree or just eat it plain!
Lately this is all I have been eating for lunch. I whip up a quick batch and eat about 2 servings (about 2 cups). It is so refreshing with the crisp cucumber, the juice tomatoes and the creamy cheese all lightly coated with vinegar and olive oil. My mouth is watering just talking (well typing) about it. I love this salad so much! Give it a try. You are bound to love it!
