Ultimate Upside Down Cake

I grew up eating my grandmother’s take on pineapple upside down cake and I have to admit it’s nothing like any other pineapple upside down cake recipe out there. My grandmother’s is sweet with a sugar glaze on the pineapples. It is VERY delicious! This cake is one of our favorites and is usually the cake chosen by the birthday boy or girl for their birthday cake. If you like pineapple you must give this recipe a try! Ultimate Upside Down Cake


Pineapple Upside-Down Cake

Ingredients

Directions

Preheat over to 365 degrees.

In a heavy 10″ skillet melt butter, remove from heat when melted. Mix in brown sugar and spread evenly. Gently press pineapple rings into mixture.

Separate eggs, beat the whites into peaks and set aside.

Then mix yolks until light and smooth. Add sugar, pineapple juice, and vanilla; Beat together until sugar is dissolved. Add flour, baking powder, and salt; Stir into batter. Fold in egg whites. Pour cake batter over sugar/butter mixture.

Cook for 35-45 minutes. Check the center for doneness and turn out immediately.
