Hard-Boiled Eggs

Hard-Boiled Eggs

Life has been so crazy the last couple of weeks with my husband traveling, me being sick, kids sick, grandfather passing, and etc. Hopefully life will slow down for a moment so that I can catch my breathe. Something that calms my mind when life gets hectic is simple cooking in the kitchen, such as cooking a egg. But not just any egg, a deliciously moist hard-boiled egg. I have to admit that hard-boiling an egg wasn’t always simple cooking for me. More often than not I was frustrated with the end result. I would get green rings around the yolks or extremely dry yolks, or even worse, uncooked yolks.

There are so many ways that you can hard-boil an egg. I don’t like my yolks overly dry, but I also don’t like them soft and under cooked. I like them perfectly cooked and creamy. Over the last 8 years of marriage, I have come up with the perfect procedure for hard-boiling an egg to meet my expectations. If you follow my steps you should be able to produce the perfect hard-boiled egg every time.

Hard-Boiled Eggs

Ingredients

Directions

Place eggs in a single layer of a sauce pan. Cover the eggs with water until just covered. Bring to a rapid boil over high heat. Boil for 4 minutes. (Drop in 4 drops of food coloring, optional)

Remove from heat and cover for 15 minutes.

Place eggs in a bowl of ice water and allow to cool.

Dry off and enjoy or place back into the fridge.

Begin by placing your eggs in a single layer of a sauce pan. Cover the eggs with water until just covered.

Bring to a rapid boil over high heat. Boil for 4 minutes.

{Note: When it begins to boil I add 4 drops of food coloring to the water. This is to help me identify which are hard-boiled and which are regular eggs, when placed back into the egg carton. I used to write “HB” on each egg with a permanent marker, but I have come to prefer the slight difference in color better.}

Remove from heat and cover the pan for 15 minutes. {Only 15 minutes, no longer. Place immediately into ice cold water. If you don’t cool the eggs down quickly you will end up with green rings around the yolks. The ring isn’t harmful at all it’s just not very pretty.}

Place eggs in a bowl of ice water and allow to cool. Dry off and place back into the fridge.

Now you are ready to enjoy a delicious creamy hard-boiled egg sandwich, a deviled egg or, or even just with a little salt and pepper sprinkled on top. Mmmmm. . .
