Deep Velvet Bites

My husband loves any kind of dessert that is red velvet. I have created a deep red velvet spritz recipe that can go inside my cookie press. But for these cookies, instead of putting them into my cookie press, I simply rolled the batter into miniature balls to create bite-size whoopie pies. These cookies are soft, chewy and extremely addictive. Since they’re bite-size it’s hard to just pop in one and be done. You will find yourself returning to the kitchen over and over to pop in “just one more”.

Directions

Preheat oven to 375 degrees.

In large mixing bowl, cream butter and sugars until light and fluffy. Add eggs one at a time, beat well after each egg. Add vanilla, mix well.

Sift together flour, cocoa, baking soda and salt. Add flour mixture gradually and mix well. Note: Batter will come together into the consistency of a very thick dough.

Take 1 teaspoon of dough and roll into miniature ball. Place onto cookie sheet.

Bake at 375 for 8-12 minutes. Cool completely on a wire rack.

Place Cream Cheese Frosting in between 2 cookies.


Detailed Instructions:

Make cookie dough as the recipe explains. When it comes to rolling out the miniature balls, I used my small cookie scoop (2 teaspoons) to scoop out some dough. I then divided that dough in half to roll out two balls. The cookie are small enough that you can place 24 balls onto each cookie sheet (11 x 17). Bake cookies for 8-12 minutes.Once baked the cookies will be about 1-1/4″ to 1-1/2″ in size; Perfect for popping into your mouth! Once the cookies are completely cooled place frosting in between 2 cookies. Note: I used a piping tip as I did here to make the frosting process quick and easy. These little bite-size goodies are wonderful to take to a book club,  church activity, play date with the kids, a picnic in the park, or even just for a lazy day at home. Enjoy!
