Back in February, I posted a picture of my youngest (18 months at the time) snacking on my homemade pico de gallo. I have received several requests, since then, to get my recipe. I usual just tell people to throw things in and taste as you go. Well, I finally put together an actual recipe.

Pico de Gallo

Ingredients

7 Tomatoes, chopped

2 Jalapenos, de-seeded and chopped

1 Onion, chopped

1 Lime, zested and juiced

1/2 cup – Cilantro, de-stemed and chopped

1/2 tsp. – Salt

1/4 tsp. – Garlic Powder

Directions

Begin by chopping up the tomatoes*, jalapenos, onion** and cilantro. Throw in a mixing bowl.

Zest and juice lime. Add zest and half of the lime juice to the mixing bowl.

Add the salt and garlic powder to the mixing bowl.

Mix everything together well and taste. Add more salt and lime juice, if needed.

Makes about 5-7 cups depending on your tomato size.

*Roma tomatoes work best for this recipe, less seeds.

**Any onion will do; Red, yellow, or white.
