My sister’s mother-in-law, Bonnie, has a wonderful banana bread recipe. We make it at least once every two weeks, but we make it into mini muffins, instead of bread, and add chocolate chips. We personally think the mini muffins are better than regular size muffins. Maybe it’s that there is more outside crust, or maybe it’s because you can just pop the whole things right into your mouth?!?

Chocolate Chip Banana Muffins

Ingredients

  • 1/2 cup Butter
  • 1 cup Sugar
  • 2 Eggs
  • 4 Lg. Bananas, very ripe
  • 1 – 3/4 cups Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Chocolate Chips, optional

Directions

1 – Put first four ingredients into a mixing bowl and mix. Add the remaining ingredients and mix.
2 – Pour into greased and floured loaf pan or into well greased muffin tin.
3 – Bake at 350 degrees. (Use toothpick to test.)
  • Bread – 1 hour to 1 hour and 15 minutes.
  • Regular Muffins – 15 to 20 minutes.
  • Mini Muffins – 8 to 12 minutes.

Note: This recipe makes 1 loaf, or 24 regular muffins, or 5 to 6 dozen mini muffins.

Picture Directions:

When mixing together I don’t use beaters or a kitchen mixer. I just use my King Arthur Dough Whisk, but most people don’t have a hand dough whisk so a regular whisk would work great too. Note: Don’t over mix or you will have very tough muffins! Just mix until the flour in combined.Bonnie's Chocolate Chip Banana Muffins

Pour into greased and floured loaf pan – if you are making it into bread. Spoon (or I use a cookie scoop) into well greased muffin tin – if you are making it into muffins.

You will notice that your mini muffin tin is all crusted and stuck on after several dozen. Check out my post on Cleaning Muffin Tins for a quick easy way to clean up.
